Love is in the air. Valentine’s Day is just around the corner and if you still haven’t made plans with that special someone in your life I have the perfect date night for you. How about dinner and your choice from three “mood enhancing” cocktails at Azure Restaurant & Bar at the InterContinental® Toronto Centre? Designed to keep you alive, uplifted and relaxed these romance cocktails are the perfect mood setters to a night of love, romance and if you’re lucky a little cuddling. Did I say love is in the air, I meant it’s in the cocktail.

Located on Front Street one block from Union Station, the Intercontinental Toronto Centre and Azure Restaurant & Bar offer easy access to all the nightlife and excitement that downtown Toronto has to offer. Or you just stay in and relax at your leisure. You may want to start your Valentine’s Day with one of these three new and delicious cocktails created just for this special occasion.

For those that love a little pineapple, there is The Very Merry Pineapple Martini. A sweet tropically inspired libation that transports you to sunnier and warm climates with just a sip. I’ll share the recipe below if you’d like to try making this at home.

Not into pineapple, how about berries? A Berry Relaxing Fizz is the perfect blend of raspberry infused Vodka and Sparkling Wine. A healthy dose of antioxidants and a bit of fizz to tickle your nose is sure to put a smile on your date’s face.

If you are like me and you gravitate towards more classic cocktails then The Rejuvenating Old Fashioned is the cocktail for you. It combines all the flavours of the classic cocktail but adds a new twist with a little smoke to add some flavour and theatre.

Whether you choose to indulge in the special Valentine’s Day Prix Fixe Dinner available on Feb 14th or you go rogue and order a la carte from the menu I think you’ll be very happy. The food here is excellent and I am particularly fond of the Charcuterie and Cheese plates. You can never go wrong with cured meats, pickles and fabulous Quebec cheeses in my opinion.

Now, if you want to take you Valentine’s Date up a notch you may want to consider staying in and heading up to your own room at the Intercontinental Toronto Centre. They have a romance package that includes sparkling wine, breakfast in bed and more. Rates start at $299.

If staying at home with your loved one is what the Valentine’s Day cards have in store for you then why don’t you try making one or all of these cocktails at home. Azure Restaurant has graciously shared the recipe so you can try your hand at making them yourselves.

The Rejuvenating Old Fashioned


  • 2 oz. Makers Mark bourbon 
  • 1 oz. freshly squeezed orange juice (strained to remove pulp) 
  • 1/2 oz. honey cherry syrup
  • 10 dashes Dillons orange bitters 
  • 1 maraschino cherry 

 Honey Cherry Syrup:

  • 1 oz. honey 
  • 1/2 oz. warm water
  • 1/2 oz. cherry juice


Mix honey, warm water and cherry juice together to make Honey Cherry Syrup. Place cherry into rocks glass filled with ice. Add bourbon, orange juice, honey cherry syrup and bitters into a mixing glass with ice. Stir and strain into smoking flask. Smoke liquid with PolyScience smoking gun. Cover flask with coaster and pour into prepared rocks glass at table site.

 The Very Merry Pineapple Martini


  • 1 oz. Malibu Rum
  • 1 oz. Henkel melon liqueur
  • 1/8 oz. Jagermeister
  • 1/8 oz. Chambord
  • 2 oz. pineapple juice
  • 1 pineapple triangle 


Chill martini glass with ice water. Place all ingredients into cocktail shaker with ice. Shake and strain into martini glass. Garnish with pineapple triangle.

A Berry Relaxing Fizz


  • 1 1/2 oz. Absolute raspberry vodka
  • 2 oz. strawberry purée 
  • 1/2 oz. lemon syrup 
  • 3 oz. Kew sparkling wine
  • 1 strawberry 

Lemon syrup:

  • 1 oz. lemon juice
  • 1 1/2 oz. simple syrup 


Add raspberry vodka, strawberry purée and lemon syrup into a cocktail shaker with ice. Shake and strain into Champagne flute. Top up with sparkling wine and garnish with a fresh strawberry.
